A delicate chantally parfait enclosed by two discs of crispy, yet light puff pastry. This cake is Vivoli’s workhorse and can be found in ice cream parlours in different sizes or ordered in any size, perfect for any occasion or for 3- or 5-tier wedding cakes.
Zuccotto is one of Florence’s most famous and ancient sweets, also known as ‘Catherine’s helmet’ because history tells us that this cake was invented by Bernardo Buonatelenti at a banquet for Catherine de’ Medici. To delight the palate of the diners at the end of the meal, he came up with the idea of covering the inside shell of a helmet with sponge cake, then soaking it in Alrchermes liqueur and filling it with sheep’s milk ricotta, candied citrus peel and dried fruit. Nowadays in Florence it can be found in many versions, but the shape and the alcoholic syrup used remain unchanged. At Vivoli’s, the filling includes a cream semifreddo enriched with candied citrus peel and red cherries and a dark chocolate semifreddo.
Vivoli’s marengo is the perfect combination of the crunchiness of meringue and the gluttony of whipped cream embellished with 70% dark chocolate chips. The right percentage of sugar in it makes this cake perfect for any occasion. Versions with a black cherry variegation or a fresh raspberry sauce are also available, making it even more elegant.
